Ziyang Mao Jian tea is a Green tea from Shaanxi designated as a China Famous historical Tea since Qing Dynasty. It is not only a kind of high-grade tea,but also it is of high value in Medicine. Mao Jian literally means "hairy tips" referring to the appearance of the tea leaves. The brewed tea is pale-gold in color and has a grassy fragrance with a sweet, long lasting aftertaste. Brewing parameters: WATER (by weight) 1:65. Better use a glasses to watch the leaves dance though a gaiwan is just fine. Tea in glasses first then water. Use 90C water for the first infusion to open up leaves, then back to 80C for coming up infusions. Brew time = 3 mins.Leaves can last 3 infusions. Other rules for brewing green tea applies. an be brewed with a Gaiwan. But since porcelain loses heat quickly, it's especially appropriate for green tea which brews well in lower temperature.
